Chocolate Mint Cookies

A bonus of attending live classes with me is that my freezer and fridge get full up with treats and my students reap the yummy benefits of that. Feedback on these cookies was so positive that I had to post the recipe.

Chewy chocolate mint cookies are wrapped up in a thin layer of dark, rich chocolate and garnished with crispy mint “sugar”. Accompanied by a warm, fresh peppermint tea and it’s a combo made in heaven.

175g ( 1 cup ) buckwheat, soaked 1 hour, sprouted 12 hours
125g ( 1 cup ) cashews, soaked 1 hour and rinsed

150g ( 1 cup packed ) cacao powder or cocoa powder
50g ( ⅓ cup ) coconut flour
200g ( 1 cup ) coconut sugar
100g ( ½ cup ) xylitol
20g ( 2 tbsp ) psyllium husk
1 tsp tamari
1 tsp vanilla extract
5-8 drops peppermint essential oil ( start with less and add more if needed )

Method

  • Before using the buckwheat, give it another rinse in a sieve and then allow it to drip dry for 5 minutes to remove as much excess water as possible. Any excess water will change the texture and dilute flavour.
  • Pulse the buckwheat and cashews in a food processor to break down into a dough consistency.
  • Add the remaining ingredients and pulse to combine.
  • Moisten your hands a little so the dough doesn’t stick to them and transfer the dough to a Teflex dehydrator sheet.
  • Dust the ball of dough with some cacao powder to be sure it doesn’t stick when you roll it out.
  • Place another Teflex sheet on top of it and roll the dough to a ¼ – ⅓ inch thickness or as desired.
  • Using a cookie cutter of your choice, I did 2 inch rounds, cut the dough and place the cut pieces onto a Teflex lined dehydrator tray.
  • Repeat the process until all dough is used and then dehydrate the cookies for at 115f for 4 hours on one side, flip off the Teflex onto mesh and dry a further 4-8 hours, depending on how dry you like them. You may want to try them at different stages to see if you like them a little more chewy inside.
  • Once they are as you like them, remove from the dehydrator and cool before proceeding to enrobe them.
