
Making pure chocolate at home is so easy using this double boiler method and just two ingredients. Pure or 100% chocolate is chocolate that is made using just cacao paste/nibs and butter. No sweeteners or anything else added to the chocolate. The cool thing about this recipe is that you don’t need any fancy equipment. Just bear in mind that it will be very bitter for some people, so you might want to add some dried fruit after you’ve tempered it to add some sweetness. Or use this as an awesome enrobing chocolate – just be sure the filling is sweet enough to cut through the bitterness of the chocolate shell. Instructions
- Melt the paste and cacao butter over a double boiler to 42°C / 107°Be careful not to allow it to heat up above 50°C as it will burn the chocolate.
- Follow the tempering video to finish the chocolate.
