In the last 12 months I’ve received more and more requests from chefs, cafe and restaurant owners and food companies to help them with implementing more health conscious chocolates and desserts into their menu offering or product line.

Let’s face it, if you try to do it alone, you’re likely to end up wasting months of trial and error testing and a lot of money on products that won’t work. You’ll be buying and using the wrong materials and equipment and following recipes from books that are not intended to be upscaled into larger production and which make your business look like a copy cat. It’s important that we’re realistic about our skill sets when we start a business or brand into an area we’re unfamiliar with. For instance, when I knew my business was ready for a rebrand, I hired a professional branding expert to work with me on it. There’s no way I could have done it on my own. It would have been a waste of time and resources and left me sad, frustrated and in a difficult financial position from spinning my wheels and making the wrong decisions.

  • Bespoke recipes: Developing unique, delicious recipes that are a perfect match for your existing menu. I recommend adding the recipes on your seasonal menu first and working with you staff to teach them how to continue to develop recipes once I’m gone. This creates a more sustainable business model and empowers you and your staff.
  • Ingredients / pricing analysis: Let’s face it raw ingredients can be expensive, so here I look at the currently suppliers and ingredients you’re using and how we can cut costs to make your offerings the most price efficient as possible.
  • Staff training: Consistency is key so here I work with your staff to establish their strengths and weaknesses and work with each of them to bring balance to both sides. Your business will only be as strong as your staff members and each team member plays a critical role in it’s continued success.
  • Production and equipment: Another area where there are so many choices and a lot of confusion, in some cases. If your kitchen is already set up when you call me, we’ll do our best to work with what you have. I’m not into spending money unnecessarily. However, if we can start from scratch, we’ll kit you out with the most effective equipment possible. This doesn’t mean the most expensive, just the smartest and the ones that will yield you the highest quality product and a timely manner.
  • Nutritional analysis: If you’re saying it’s healthier, you need to know what you are serving and be able to confidently answer your customer’s questions. I’ll make sure your staff is fully trained to answer any and all questions that come their way and we will have a rough nutritional analysis of your menu items drawn up to share with customers when asked / if desired.
  • Troubleshooting kitchen inefficiencies: When the kitchen isn’t set up right, you’re going to lose money. It’s that simple! I help you become efficient by organising your kitchen to the nines! This is one of my strongest points and one I am very diligent with. It was branded into me as a chef and I am happy to say it’s stuck with me ever since. Organisation is the absolute key to a successful food business. Bottom line. This translates into visual tidiness as well as managerial organisation. Meaning staff training manuals and recipe binders, this means everyone is on the same page and everything in your business is as consistent as possible.
  • Full menu planning: My training as a professional chef and over 10 years as a raw chef allows me to develop both raw and semi-raw, and sweet and savoury menus that suit both raw food businesses and more general health based businesses alike. (great for individual chef’s and restaurants looking for inspiration)
  • Although I operate as a “one stop shop”, I have a team of professionals that I sometimes bring on board depending on the size and scope of the project.
